Comfort Food: Honey Dijon Pork Chops

This is one of my easiest recipes to throw together, yet one of my husband’s favorite meals with mashed potatoes and roasted carrots! With the gloomy, rainy weather today, I’m in the mood for some comfort food and this is a simple fix! I thought I’d share in case anyone else is having a gloomy day. Ingredients: 6 thinly sliced, boneless pork chops 1/4 cup dijon mustard 1/4 cup (half stick) of butter, melted 3 tablespoons honey Salt & Pepper Garlic Powder Directions: Preheat oven to 375 degrees. Friday Favorites: May 2017

Happy last Friday of May! Let’s jump into some favorites for this month! One. Summer is here! I’m super excited for the long weekend, including a pool day on Monday! Recipe: Gluten Free Blueberry Muffins

These aren’t just any muffins, these are pancake muffins! I’ve found that gluten free pancake mix makes the best flour substitute in muffins! What can I say, when you can’t use traditional flour in your recipes, you tend to get creative! Last week I had tons of fresh blueberries to work with so I whipped up a batch of these and it was a great decision. Enjoy! Gluten-Free Buckeye Brownie Cookies

Saturday is cheat day and this past weekend I made these absolutely delicious Buckeye Cookies, gluten-free of course! I’m a chocolate peanut butter combo fanatic and these are perfect for all my cravings! 🙂 What You Need: 1 box Gluten-free brownie mix (I like the Betty Crocker brand) 8 oz cream cheese, softened 1 egg 1/2 stick (1/4 cup) butter + 1 Tablespoon 1/2 cup peanut butter 1/2 cup powdered sugar 1 cup of chocolate chips Directions: Preheat oven to 350 degrees. Combine brownie mix, egg, cream cheese and 1/2 stick of butter in a large bowl. Banana Pudding is a childhood favorite of mine. I remember there being a local fried chicken restaurant by my house growing up that had the very best Banana Pudding. Smoked Fish Dip Recipe

This weekend my better half went fishing and had a successful trip so he brought them home, smoked them and whipped up an amazing dip! I really love being with a man who can cook! We specifically had Whiting fish but the dip would be good with any mild, whitefish. Here’s Jeff’s recipe for Smoked Fish Dip! Enjoy!
