Friday Favorites: May 2017

Happy last Friday of May! Let’s jump into some favorites for this month! One. Summer is here! I’m super excited for the long weekend, including a pool day on Monday! And I’ve even more excited for a trip to Siesta Key that we’ve booked in a couple weeks with my family! I definitely have some serious summer vibes and can’t wait to soak up the sun! Two. Recipe: Gluten Free Blueberry Muffins

These aren’t just any muffins, these are pancake muffins! I’ve found that gluten free pancake mix makes the best flour substitute in muffins! What can I say, when you can’t use traditional flour in your recipes, you tend to get creative! Last week I had tons of fresh blueberries to work with so I whipped up a batch of these and it was a great decision. Enjoy! Ingredients: 3 cups gluten free pancake mix 1 tablespoon salt 1 tablespoon baking powder 1 teaspoon baking soda 1 teaspoon cinnamon 1/2 cup of sugar 1/2 cup melted butter 1 cup almond milk 1 ripe banana 2 cups fresh blueberries Directions: Preheat oven to 400 degrees. Time for a check in on my 101 in 1001 Bucket List! I’ve made some progress but there’s a few things I missed and a few things that have me saying “what was I thinking when I thought I could accomplish that?” (i.e. vegetarian for a month – sounded like a good idea at a time, but no interest right now). It’s funny to look at and think about how quickly your goals and wants can change in life. But for the most part I’m all in on these. Mother’s Day Weekending 2017

This weekend was all about celebrating the special moms in our lives. I’m lucky to now have two moms that could not be more supportive, loving, giving, understanding and best of all always know how to have a good time. On Saturday, Jeff and I took our moms to brunch at one of our favorite spots Dixie Cream Cafe and then blueberry picking at Beck’s Brothers Farm. It was a blast and ended with us running through the farm in the pouring rain. The Marriage Pact by Michelle Richmond – 4 stars Received from NetGalley in exchange for my honest review. A newlywed couple gets themselves sucked into a secret, dark society. It’s equal parts creepy, intriguing and unbelievable. Wasn’t sure how I felt about the ending, it seemed like a let down but I didn’t exactly hate it. What’s New {May ’17}

What’s New? This week has been tough to keep up. I’ve just been feeling like I’m fighting off a cold and exhausted. But I’m accomplishing most of what I set out to each day so I’m hanging in there. April was a good month. I adjusted to my new work schedule, got back into a workout routine and filled the month with fun stuff in between. April Happenings: Trips to Epcot and Disney Springs for the Flower and Garden Festival, yummy lunch at The Boathouse, and the Origins Launch Party. Show and Tell Tuesday: Grown Up Parties

When I saw that today’s topic for Show and Tell Tuesday was parties I couldn’t pass up the chance to link up! I LOVE planning and hosting parties to celebrate friends and family. Two of my favorite parties I’ve helped to host in the past year were my best friends baby shower and a family friends bridal shower. For both of these, I was co-hosting. I had two other friends to help me with my best friends baby shower and I was helping my mom out with her friends bridal shower when she was MOH. This weekend I was invited by Influenster and Origins to the My Perfect World Launch Party at Disney Springs. So, I grabbed a friend and we headed out for the afternoon. What a change they’ve made to Disney Springs, so many shops and restaurants. It’s a great place to spend a Saturday afternoon, they have some of my favorite stores now: Origins, Kate Spade, Francesca’s, Pandora, Alex & Ani, Sephora….the list goes on and on. We headed straight for Origins first. They were re-launching the My Perfect World line and we got to enjoy mini-facials and then have our makeup done.
