Comfort Food: Honey Dijon Pork Chops

This is one of my easiest recipes to throw together, yet one of my husband’s favorite meals with mashed potatoes and roasted carrots! With the gloomy, rainy weather today, I’m in the mood for some comfort food and this is a simple fix! I thought I’d share in case anyone else is having a gloomy day. Ingredients: 6 thinly sliced, boneless pork chops 1/4 cup dijon mustard 1/4 cup (half stick) of butter, melted 3 tablespoons honey Salt & Pepper Garlic Powder Directions: Preheat oven to 375 degrees. Friday Favorites: May 2017

Happy last Friday of May! Let’s jump into some favorites for this month! One. Summer is here! I’m super excited for the long weekend, including a pool day on Monday! Recipe: Gluten Free Blueberry Muffins

These aren’t just any muffins, these are pancake muffins! I’ve found that gluten free pancake mix makes the best flour substitute in muffins! What can I say, when you can’t use traditional flour in your recipes, you tend to get creative! Last week I had tons of fresh blueberries to work with so I whipped up a batch of these and it was a great decision. Enjoy! Gluten-Free Buckeye Brownie Cookies

Saturday is cheat day and this past¬†weekend I made these absolutely delicious Buckeye Cookies, gluten-free of course! I’m a chocolate peanut butter combo fanatic and these are perfect for all my cravings! ūüôā What You Need: 1 box Gluten-free brownie mix (I like the Betty Crocker brand) 8 oz cream cheese, softened 1 egg 1/2 stick (1/4 cup) butter + 1 Tablespoon 1/2 cup peanut butter 1/2 cup powdered sugar 1 cup of chocolate chips Directions: Preheat oven to 350 degrees. Combine brownie mix, egg, cream cheese and 1/2 stick of butter in a large bowl. Friday Favorites in October

Fall Weather. My first favorite is that we are actually getting some cooler weather! We had a gorgeous weekend last weekend and it’s been cool afternoons and even cooler mornings since then. I had lunch outside and went on a run outside this week and it was awesome! It’s SO getting me in the mood for the holidays! One//This is a very special Friday because it is my last Friday in the office at my current job. Good morning! I’m linking up for Delicious Dish Tuesday to share a Breakfast Casserole recipe! I love making breakfast casseroles on Sunday mornings and having them throughout the week.
